Ora, muito fácil. É só buscar no dicionário. “Pimenta” é pepper, portanto é só procurar por essa palavra. Vamos começar com os dicionários on-line.

Bem, pelo menos já dá para desconfiar que “pimenta-do-reino” é black pepper. Mas, e o resto?

1 : either of two pungent products from the fruit of an Indian plant (Piper nigrum) that are used chiefly as condiments: (1) : black pepper (2) : white pepper.
Ficamos sabendo que há dois tipos de pimenta: black pepper – a nossa “pimenta-do-reino”, e white pepper, nossa “pimenta branca”. Continuamos sem saber como dizer “moida na hora”.

Esse nos dá uma indicação de que “moída” pode ser ground. Já estamos no terceiro dicionário!
Há um site de tradução. Vejamos, embora seja para o português europeu:

Na 1ª. opção, mesmo que fosse correta, faltou o black. A segunda, embora só mude o tipo de pimenta, é bem diferente da primeira. Finalmente temos a terceira, que pode ser a opção correta.
Em resumo, consultamos 4 fontes para chegar a uma tradução possivelmente correta.
Se tivéssemos recorrido aos dicionários tradicionais em papel, não teríamos tido melhor sorte. O Macmillan, assim como outros similares, só nos dá a definição.
Já no Cobuild encontramos
- Pepper is a spicy-tasting black or cream-coloured powder which is used to flavour food. EG. …freshly ground black pepper…
Por sorte, a expressão que buscamos encontra-se num exemplo. O mesmo acontece com o Oxford Collocations:
- spice
- ADJ. ground freshly ground black pepper
É importante observar que os dois últimos são obras baseadas em corpus, sendo o segundo um dicionário específico de colocações. Ou seja, todas as entradas são extraídas de corpora.
Pois bem, existe uma forma mais rápida e direta de encontrarmos a expressão que buscamos: consultar DIRETAMENTE um corpus.
No Projeto CoMET, que significa Corpus Multilingüe para Ensino e Tradução, existe um corpus técnico, o CorTec, composto por textos em inglês e português de 13 áreas distintas. Para consultá-lo, bastante entrar no site www.fflch.usp.br/dlm/comet e clicar em CorTec no lado esquerdo.

Na tela seguinte, preenchemos “Expressão ou Palavra – igual a” com pepper e clicamos em Aplicar Concordanciador. Obtemos 1128 ocorrências de pepper:
Essas ocorrências são exemplos autênticos extraídos do corpus. Se observarmos as linhas atentamente, veremos que freshly ground black pepper aparece na linha 16. Há também uma ocorrência de freshly ground pepper na linha 18. Se continuarmos a olhar a lista encontraremos outros exemplos:
